MONDAY

Quick Chicken with Parsley Walnut Salsa

I am so in love with nut salsas at the moment. I just adore how you can make a fresh sauce with the beautiful crunch of roast nuts. So it becomes both sauce and textural interest.

I also love that they’re super quick to make. Just chop some herbs and nuts while you’re cooking the rest of the dinner. Stir in some nice peppery extra virgin olive oil and either lemon or vinegar.

TUESDAY

Super Simple Egg & Bacon Pie

This pie has it all… Creamy, cheesy eggs. Smoky, salty bacon. Chopped chives for freshness.

And the worlds simplest pie crust.

Plus it’s incredibly versatile.

I’m just as happy eating a slice for breakfast as I am for lunch and dinner. It travels well so is perfect for picnics or for making work lunches a little special.

Oh and it’s ready in 30 minutes.

Plan-B Pesto Beans

My latest favourite pantry ingredient is easily frozen baby beans.

It’s funny I still feel myself having my old childhood resistance to frozen beans even though I know they are delicious. Each time I notice the hesitation and cook the beans and totally ENJOY them, it feels extra good that I’m rewiring my old programing.
I’ve also rediscovered commercial pesto as an incredibly tasty pantry ingredient. I’ve been pleasantly surprised how much I’ve enjoyed trying different commercial brands.

And even better that when I made this and served it tossed over spaghetti for my boys they loved the pesto as well! Even though it’s green! Of course they didn’t like the beans but one step at a time.

Burgers with Mint & Almond Salsa

The idea of a chunky crunchy sauce that works to both flavour and provide substance is so useful to have in your repertoire.

It’s amazing for turning a humble burger patty into a truly special meal. But also works equally well with fish, chicken or even an omelette.

I shamelessly stole this idea. Yep this delicious Middle Eastern Chicken & Broccoli Magic Meal did not come from my brain.
It was happily crowd sourced from my Joyful Cooking students.

But given that one of the things I teach them is to ‘steal with pride’ it seems fitting to publish our combined efforts.

How to Host a Chocolate Tasting

One of the secret weapons I’ve developed for making life easier when I’m entertaining is to host a chocolate tasting for dessert. I use to sample chocolate and biscuits (cookies) on a regular basis for a living. And had the inspiration that tastings could be fun to do with your friends. Not to mention easy to prepare. It’s literally dessert in 10 seconds.
