3 Easy Steps to Make a Frittata

[dropcap style=”font-size: 60px; color: #9b9b9b;”] A[/dropcap] few weeks ago I was talking to my friend Elizabeth about how much we love a frittata for a quick and healthy weeknight dinner.

A good frittata is certainly a thing of beauty. I love how it feels relaxed. It’s like having a pizza without having to make dough. Or worry about the carbs.

For years my frittata attempts were hit and miss, until I discovered an easier way…

Rather than fiddling around with trying to cook my frittata in a frying pan on the stove top, I started baking them in the oven.

So. Much. Easier.

Just pop everything in the oven, set your timer and dinner is sorted!

3 Easy Steps to Make a Frittata

For 2 people…
STEP 1. Preheat your oven to 180C (350F). Grease a 20cm (8in) oven proof frying pan or spring form pan.

STEP 2. Mix 6 eggs in a medium bowl until just combined and pour into your prepared pan. Top with a few handfuls of your favourite flavouring(s) (see below for ideas).

STEP 3. Bake for 15-20 minutes or until frittata is puffy and just cooked through.

Flavouring Ideas

carb based – cooked or canned beans, lentils or chickpeas. Cooked veg such as potato, sweet potato, pumpkin or parsnip. Cooked pasta, rice or other grains.

vegetables – Wilted greens (spinach, kale or chard), defrosted frozen spinach, cooked zucchini, caramelised onion, steamed broccoli, steamed broccolini, steamed cauliflower, grilled eggplant, grilled red peppers (capsicum), cooked mushrooms, sun dried tomatoes, artichoke hearts, sweet corn kernels, asparagus, leftover roast veg, roast beets, cherry tomatoes.

meat / fish – bacon, salami, prosciutto, smoked chicken, cooked chicken, cold roast meats, smoked salmon, cooked sliced or crumbled sausages, sliced chorizo, canned sardines.

cheese – especially parmesan, goats cheese, feta, ricotta, blue cheese, taleggio, cheddar.

herbs – rosemary, sage, thyme. Add leafy herbs such as basil, mint or parsley after the frittata is cooked.

other – pinenuts, toasted bread crumbs, chilli flakes or powder, preserved lemon slices, olives, pesto.
