Pdro Ximenes or ‘PX’ vinegar is a Spanish ingredient made from sweet dessert sherry. If you can’t find it, here are my favourite ‘PX’ Sherry Vinegar Substitutes.
The Best Pedro Ximenes Sweet ‘PX’ Sherry Vinegar Substitutes
(in order of preference)
1. Balsamic Vinegar
With the similar sweet acidity balsamic is the closest in flavour profile and acidity strength to sherry vinegar. Generally substitute 1:1.
2. Sherry Vinegar
The next closest option is a traditional sherry vinegar which is made from dry sherry instead of the semi-sweet sherry used in PX vinegar. If you don’t mind the lack of sweetness you can use sherry vinegar on its own.
But for a closer match add a few pinches or brown sugar or honey to add sweetness. Adding a few currants soaked in vinegar is another option.
3. Apple Cider Vinegar
Apple cider vinegar is similar in terms of the intensity of the acid. But like sherry vinegar it won’t have the sweetness so adding a little sugar or honey will help.
4. White or Red Wine Vinegar
Another good substitute. I find most wine vinegars have a harsher or stronger acidity than sherry based vinegar so I would use slightly less if substituting. And again add a few pinches or brown sugar or honey to match the sweetness.
5. Lemon / Lime Juice
Citrus juices rely on citric acid whereas all the wine vinegars mentioned above are acetic acid based. This means citrus juice has a completely different flavour profile. And none of the sweetness.
But if you don’t have any vinegar in the house, or have a vinegar allergy, a squeeze of lemon or lime will provide freshness and bring the other flavours of your dish to life in a similar way to vinegar. You may even enjoy the flavour differences!
