
This Killer Kale Gratin is my idea of a perfect one pot meal. Lots of veggies and creamy cheesey goodness. Perfect for a chilly Autumn (or Spring) evening.
If you’re cooking for a particularly hungry carnivore, you may need to up the protein and serve it as a side to a roast chicken or juicy steak. OR or even some fried or poached eggs.
If you’re not a kale fan there’s no need for you to miss out. The idea works with so many vegetables. Most greens will work. I’ve used cavolo nero in the photo but you could use curly kale, English spinach, silverbeet (chard) or even chinese broccoli or broccoli rabe.
It’s also fantastic with broccoli or cauliflower (steam first) or sliced cabbage.
As always endless possibilities. And we haven’t even talked about the cheese options!

Killer Kale Gratin
Ingredients
- 1 onion
- 6 slices bacon
- 1 large bunch kale or other greens (approx 250g / 9oz)
- 1 cup double cream or heavy whipping cream
- 2 large handfuls grated cheese
Instructions

Preheat your oven to 180C (350F).

Dice onion and chop bacon into bite sized chunks. Heat a little oil in an oven proof pot and add bacon and onion. Cook over a medium heat until the onion is soft, about 10 minutes.

Slice kale (or other greens) crosswise into ribbons about 1cm (1/2 inch) wide. Add kale and cook for a few minutes, stirring so it starts to wilt down. Add cream and stir well.

Cover the pot and transfer to the oven. Cook for 15 minutes with the lid on.

Sprinkle over the cheese and cook for another 10-15 minutes or until the kale is tender and the cheese golden.
Variations
different greens – most greens will work here. Cavolo nero is great or curly kale, English spinach, silverbeet (chard) or even chinese broccoli or broccoli rabe.
different veg – also fantastic with broccoli or cauliflower (steam first) or sliced cabbage.
dairy-free / vegan – replace cream with coconut milk and sprinkle with pinenuts or flaked almonds instead of the cheese. Or cook the onion, bacon and kale and serve with a dairy-free sauce like cashew pesto or this addictive tomato almond pesto.
different cheese – I used a comb of emmental, gruyere and parmesan but any melting cheese will work including cheddar.
carb lovers / more substantial – toss in some cooked short pasta before adding the cheese. Or serve it slathered on some hot buttered sourdough toast.
can’t find double cream? – just use whipping cream or heavy cream instead. Any cream will work.
higher protein – add any cooked meat, canned canned tuna, sardines, ham, cooked lentils, chickpeas. You could also add eggs with the cream – they will scramble as they cook in the oven but I quite like the soft curd texture.
vegetarian – replace bacon with sun dried tomatoes, grilled peppers or feta or smoked almonds or smoked tofu.
