MONDAY
Beautiful Broccoli Burgers
It’s funny how ideas come and go. Years ago I created a ?Zucchini Burger? recipe and was super excited about veggie burgers that actually contained vegetables. At the time I was keen to try a broccoli burger.
A few months ago I was talking to my friend Aggie about how useful frozen vegetables are to have up your sleeve (or rather in your freezer). And I remembered the broccoli burger idea.
Which got me thinking about my ?Best-Ever Broccoli Salad?. Which lives up to it’s name because, bacon. And parmesan.

TUESDAY
Slow Lime & Coconut Chicken
Just throw lime, salt, coconut milk and chicken in the slow cooker (or a casserole dish if you want to go the oven path).
Then cook until the chicken is super tender and the chicken juices have combined with the fresh lime and the creamy coconut to give you a sauce so delicious, you’ll want to serve it with a spoon so you don’t miss a single drop.
The other fun thing about this dish is all the ingredients keep for ages (apart from the herbs) – so it’s a fab little pantry recipe to have as a backup in your repertoire.
Simple is my super power. And it’s yours too now.

Pesto Baked Eggs
Skeptical about how easy and how tasty a healthy 3-ingredient meal can be? Well this little combo of pesto, frozen spinach and eggs might just blow your mind. Seriously these Pesto Baked Eggs are so good.
You’ll have no excuses for having cereal for dinner when you have this little number in your repertoire. Unless of course you love having cereal or toast for dinner (in which case save these eggs for breakfast or lunch!).

THURSDAY
Best Ever Beef Stroganoff
We have the lovely Susan, one of my long time Simple Meal Plans students to thank for this recipe.
Years ago she shared her recipe for ‘skid row’ stroganoff using ground (minced) beef. Without that spark of inspiration I would never have even thought to dip my toes into the stroganoff waters.
I’m not sure why it took me years to create this. Possibly boarding school food associations.
But I LOVE mushrooms and I love sour cream. So I shouldn’t be surprised how much I LOVE this dish!
Better late than never

FRIDAY
Japanese Salmon Oven Supper
I just can’t get enough of this coleslaw mix roasted with salmon, soy and maple.
I just love how the sweet salty sauce cooks down with the cabbage and carrot to make the most delicious vegetable experience.
Think comforting like a big bowl of udon noodles but a million times more flavoursome (and a million times better for you). This is one comfort food that won’t leave you feeling heavy like you’re wearing a lead blanket afterwards.

SWEET TREAT
Chocolate and Nut Butter
OK so I know you don’t really need a recipe for this, but I thought I’d write it for you anyway.
This is my latest go-to when I feel like having dessert on a Saturday night.
It only takes a second to pull together and satisfies that urge for something to round out the meal. Without loading you down with sugar and carbs.
